Is it possible to target products in a specific category? In the Position settings after setting ‘Post Type is equal to Products’ I have tried adding a further setting of ‘Post Category is equal to…’ however the options displayed are from the Posts categories, not the Product categories.

I guess what you want to are looking for is the following:
Post Taxonomy is equal to [your product category]A “post category” is always tied to a single post (not to a product).
