Yes, you can build nearly every schema.org syntax that is available on schema.org.

What do you mean by “must it be real”?
Can I “Add new property” schema for a specific type of product identification, ie. ICS Code, UNSPSC Code which is used to identify metal tubing? Much like GTIN-8 and MPN, ICS and UNSPSC are used specifically for steel tubes and pipes and are recognized by the industry. Thanks!

Does this plugin work with custom post type and custom fields?
Yes and no. Depends on what you want to achieve. If you have custom fields that have no weird data format (like JSON or serialized data) you can use that data for reach snippets.
And yes, custom post types do also work.
In your video “How to add a Rich Snippet to a blog post” I see that you have a Restaurant schema. Can I use the plugin to create a complete rich snippet restaurant menu, including menu sections, menu items, portion size options, item prices, etc?
I don’t know if a complete menu would be possible. As far as I know a LocalBusiness supports the menu property from schema.org but this is currently in the testing phase at Google.
Can users apart from admin be able to access and edit / add the snippets. We haev dedicated SEO editor whom I need to give access to and cannot provide admin acess.
